Too Long
So, it has been far too long since I have had the chance to sit in front of a keyboard and throw down what has been on my mind, or going on in my world.
Evangeline is going well. I would like to thank everyone who has dined with us, and appreciated what we are doing. Since the first night, we try to do things more efficiently and with more finesse than the night before, and we try to learn from our mistakes. I have learned numerous lessons about food, hospitality, business, finesse, life, and have learned which battles to choose. This isn’t Bandol, with 18 seats, where I have my eyes on everything. I have a great staff, who I trust to do as I would do in any situation. (Well, not entirely, but they don’t work there anymore….live and learn, right?).
Next Sunday, Krista Kern and I are getting married. Sunday the 27th, at 3:30 PM, under a tree in Sugar Hill, NH, with our closest friends and family surrounding us. This will be an amazing point in my life, and a chapter I am totally psyched about. I was born in the town right next door to Sugar Hill, and have known this tree my entire life. It seems fitting to have the ceremony under the tree with the White Mountains as a fiery autumnal backdrop.
After the ceremony, we will wine and dine with our friends and family, then the next day, we are off to Montreal to enjoy dinner at Au Pied De Cochon, where we proposed to each other almost a year ago. And to have the pig’s foot stuffed with Foie Gras….a dish they were out of that night.
I have been fortunate to have found a staff that I trust to run things while I am gone for a day or two. And, I am fortunate to have met Krista. I have had a great year with my new life with her, and the launch of Evangeline, (as well as the addition of two Maine Coon kittens named Townes and Matilda).
Hope to see you all in soon! Look forward to the Duck Press being a part of the menu. We have done maybe a half dozen Canard Presse, but for the fall, it will be a menu item.
And, after next weekend, Krista Desjarlais will be running Bresca, so please continue to visit her. We have to feed the goddamn cats….that she wanted to get…….
